Mashed Sweet Potatoes with Horseradish

Here's a quick recipe that puts a little different twist on the Thanksgiving staple mashed potatoes from Eric Villegas of the TV show Fork in the Road. On the show, he also had a recipe for homemade Turkey Cranberry Sausages.

Ingredients:

3 lb. large sweet potatoes
1/4 cup unsalted "sweet" butter
1 teaspoon sea salt
2 tablespoons maple syrup, preferably from Michigan
2 tablespoons horseradish, prepared in vinegar, drained

Directions:

Preheat the oven to 400 degrees F.

Place sweet potatoes on a baking sheet and roast until easily pierced with a fork, about 1 hour.

Peel the sweet potatoes while still hot. Combine the potatoes, butter, maple syrup, and horseradish in a large bowl.

Mash with a potato masher until the potatoes are smooth. Serve immediately.
