Monday's LSJ had a feature reporting that while the body absorbs white potatoes quickly, causing a huge rush of insulin that can cause weight gain and a predisposition to diabetes and heart disease, sweet potatoes don't have that liability and are also chock-full of beta-carotene. The problem (for many people) is that while they have a ready arsenal of white potato recipes, sweet potatoes are a foreign substance. The article recommends trying some of your usual recipes, experimenting with serving baked with different topping and they also give recipes including Sweet Potato Pie and Sweet Potato Corn Bread.
